I’m from the south so my Koi Sin is more a southern style while people from other parts may prepare this dish slightly different depending on their personal preferences and the availabilities of ingredients. Koi sine can be prepared raw, medium rare or well done. For me, when it comes to koi or larb I prefer more cooked meats. Similarly, proteins are also optional like chicken, pork but t
